Double Chocolate Chip Pudding Popsicles

Who remembers Jello pudding pops? Better yet, who remembers those Bill Cosby Jello pudding pop commercials? For some strange reason those commercials always stuck in my head. Maybe it was Bill’s smile or the funny way he interacted with the kids or it could be the fact that frozen pudding on a stick is like one of the most delicious ideas. Ever. Funny thing is, I don’t ever remember having one as a kid. Can you say deprived?

Now that I have kids of my own, I love the idea of making my own frozen pudding pops right in my very own kitchen using freshly made pudding (OMG! Did you see Michelle’s Mexican Chocolate pudding?-DIE!). We are actually HUGE popsicle fans in our house. I make them out of everything, like these yummy Kefir Yogurt Pops. Making your own frozen treats are  super easy to do and so much fun! I am such a sucker for adorable popsicle molds like these and these and honestly just love experimenting with different flavor combos. Besides being super fun to so, making your own popsicles allows you to control the ingredients and customize your own flavors (vanilla, chocolate, pistachio, butterscotch, mmm…) and even do some fun mix-ins (think: nuts, crushed chocolate bars, raisins, etc…). It’s also super fun to make two flavors of pudding and make a half and half pop by filling half of the mold with one flavor and topping it off with another. The pudding is thick so there is no need to freeze each layer individually. If your looking for a fruitier version, give my homemade Strawberry-Lime Gelatin a try and freeze that up too!

Note: You can definitely use the boxed pudding but, in my opinion fresh is better for you and the taste simply cannot compare. If you do use boxed, try and get the cook and serve kind, not the instant, the flavor is so much more creamy and delicious.

Double Chocolate Chip Pudding Pops

Makes approximately 8 (3 ounce popsicles)

Ingredients:

3 cups homemade chocolate pudding, cooled (or 1-3.4 oz box of cook and serve pudding, we love MyTFine brand)

1/4 cup mini chocolate chips

Instructions:

Prepare pudding as you normally would and allow to cool completely. Stir in chocolate chips and pour into 8 (3-ounce) popsicle molds. Freeze for at least 5 hours.
