Raspberry Magic Bars

Sharing is caring!

Have you tried Raspberry Magic Bars yet? If not, you are missing out.

This is a perfect dessert for the upcoming 4th of July weekend, backyard BBQs, or just for weekend treat. If you love coconut, chocolate, and raspberry, you will adore these Raspberry Magic Bars. They are so easy to make with just a few ingredients and a little bit of magic. These bars have a buttery graham cracker crust, a gooey coconut layer, a tangy raspberry jam swirl, and a crunchy nut and chocolate topping.

Since I’ve been on a huge Crumbl cookie kick lately, I decided to mix it up and try something different. These Raspberry Magic Bars were the perfect distraction from all the cookies! By the way, if you’d like to try one of the cookie recipes, may I suggest one such as the S’mores Brownie CookiesCircus Animal CookiesSalted Caramel Cheesecake CookiesS’mores Brownie Cookies or the Chilled Sugar Cookies.

I was able to whip them up and throw them in the oven in the time it took everyone to put their swimsuits on and head out to the pool. Yes, that easy! I had these babies in the oven within 10 minutes.

WHAT YOU NEED

  • 1/2 cup (1 stick) butter – melted
  • 1 1/2 cups graham cracker crumbs
  • 1 can (14 oz.) Sweetened Condensed Milk
  • 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Chips
  • 1 cup flaked coconut
  • 1 cup chopped pecans (or walnuts!)
  • 1/2 cup seedless red raspberry jam

HOW TO MAKE RASPBERRY MAGIC BARS

1) Preheat oven to 350° F.

2) Combine graham cracker crumbs and melted butter. Stir until completely combined. Press onto the bottom of a greased 13 x 9 inch baking pan.

3) Pour sweetened condensed milk evenly over crust. Sprinkle with morsels, coconut and nuts. You can use pecans or walnuts. The original recipe calls for walnuts but I used pecans and it worked out great. Press the mixture down with your hands.

4) Microwave jam in small, microwave-safe bowl for 25 to 30 seconds; stir. Drizzle raspberry jam evenly over mixture.

5) Bake for 25 to 30 minutes or until light golden brown. Cool completely in pan on wire rack. Cut into bars. Enjoy.
