21 Day Fix Spinach Strawberry Salad

I know, I know, I’m so predictable. I’m jumping back on the health bandwagon as my New Year’s Resolution and this time I’m trying out the 21 Day Fix.  I’m no expert at this program because I’ve only been doing it for 5 days but I have found my favorite lunch recipe so far.

I have to admit that I was a little overwhelmed by the colored containers and what I could eat when I started this program at the beginning of the week. So, I went to the internet and found plenty of great recipes.  But when I can’t think of what else to make for lunch (or a side for dinner!), this is my go-to recipe!

After sharing the photo on Instagram, I thought it would only be fair to share the recipe with you guys. If you don’t know what the 21 Day Fix is, you can find out about it here. (No pressure, I don’t work for them at all!)

21 day fix spinach salad

Ingredients:

1 cup Spinach (chopped)

1 cup grilled chicken breast

1/2 cup Strawberries (chopped)

1 TBSP Slivered Almonds

2 TBSP 21 Day Fix Ranch Dressing

Directions:

  1. Grill up 1 cup of chicken breast. Chop into pieces.
  2. Add 1 cup spinach to a bowl. Top with chicken and 1/2 cup strawberries. Sprinkle with almonds.
  3. Drizzle 21 Day Fix Ranch Dressing on top. (recipe below).
  4. Enjoy.

(1 Green, 1/2 Purple, 1 Red, 1/2 Blue, 1/2 Orange)

To be honest, I didn’t expect the Ranch Dressing to be good at all. I was absolutely surprised that I REALLY like it! I may never go back to regular ranch dressing!

21 Day Fix Ranch Dressing

Ingredients:
1/3 cup nonfat plain Greek yogurt
1/3 cup low-fat buttermilk
1 Tbsp. Ranch Seasoning Blend

Preparation:
1. Combine yogurt, buttermilk, and Seasoning Blend in a small bowl; mix well.
