Easy Crockpot Potato Cheese Soup

While many of us are in denial, the weather should be a major indication that it is no longer summer! Yes, Fall is here!  Officially, it started this past Monday!

That isn’t all bad though. That means jeans, boots, awesome scarves, comfort foods, holidays and THE CROCKPOT!

Today, I’m sharing with you what YOU should make for dinner! Tonight. Tomorrow. Whenever. Just make it.

INGREDIENTS:

  • 10 cups of chopped potatoes – (You can substitute 2 bags (32 oz) of frozen southern-style diced hash brown potatoes if you want to make it even easier!)
  • ¾ cup chopped onion
  • 1 medium stalk celery, diced (approx ½ cup)
  • 2 cartons (32-oz) Progresso® chicken broth
  • 1 cup water
  • 5 tablespoons Gold Medal® all-purpose flour
  • ¾ cup milk
  • ¾ cup half and half
  • 2 bags (8 oz) shredded Cheddar cheese (4 cups)
  • ½ cup real bacon pieces (optional for garnish)
  • 4 medium green onions, sliced (optional for garnish)

INSTRUCTIONS:

In slow cooker, mix potatoes, onion, celery, broth and water. Cover; cook on low heat setting 6 to 8 hours. After the 6-8 hours, in a small bowl, mix flour into milk; stir into potato mixture. Increase heat setting to High. Cover; cook 20 to 30 minutes or until mixture thickens. Remove about 5 cups of soup and place in a bowl. Add 1 bag of cheddar cheese (2 cups) and puree with an immersion blender until the cheese is incorporated. Return the pureed soup to the crockpot. Add 2nd bag of cheese (2 cups) to all the soup in the crockpot and stir until melted. Garnish individual servings with bacon and green onions. Sprinkle with pepper if desired.

I make numerous variations on the recipe below, I add different cream soups ,sometimes I add celery. You can play around with it, easy and a family favorite. I might try it with the frozen potatoes you used, but it is so good with the red potatoes.

8 cups chopped up potatoes (I use baby reds) 1/3 cup chopped onion (I use shallots) I also throw in a small handful of green onions however much minced garlic you want to put in 3 cans chicken broth 1 can cream of chicken soup teaspoon each of dried mustard and black pepper 1/2 pound bacon 1 package of cream cheese

thrown everything into the crockpot except the bacon and cream cheese, turn on low, and cook for 7 or 8 hours. when it still has an hour left to go, throw in the bacon (cooked and cut up) and the cheese.

I'll have you know, that post and video was so delicious looking that i made my hubby go to the store and get a couple of the ingredients that i don't have on hand, just so i can give this a try tomorrow ;)
