Paleo Pancakes

For years I’ve had a favorite buttermilk pancake recipe – it’s fluffy and scrumptious, and my absolute favorite way to begin the morning. So, why go hunting for a new option? Well, I’m trying to reduce our white flour intake and thus, I’ve been led to more primal recipes. Not everyone considers almond and coconut flour paleo, but some do, so for title ease, we’ll call these paleo pancakes.

After a coconut flour mishap I went to Facebook for recommendations. A friend of mine shared her go-to recipe and when I asked if I could pass it on here, she heartily agreed to share the pancake love!

Ingredients

  • 3 eggs
  • 1 cup almond flour
  • 1/3 cup almond milk
  • 3 tablespoon maple syrup
  • 3 tablespoons coconut oil, melted
  • 1/4 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 3 tablespoons coconut flour

Directions

Mix the first 5 items in a blender, then add the last 3 and blend again. Over a heated and coconut oil greased griddle, scoop pancake batter with a 1/4 cup measuring scoop. This recipe works best for smaller pancakes 🙂 When you see small bubbles – flip and allow to cook for another minute or so.

These are definitely the fluffiest non-flour/buttermilk pancakes we’ve made. They’re super yummy AND kid approved! On two occasions we’ve spiced them up blueberries and and chocolate chips and that’s a real treat too!

I definitely need to buy some almond flour. I'm reducing our white flour/processed sugar intake (and finding some serious changes in my kids behavior and the way I feel!) but I haven't bought almond flour as of yet. I found some incredibly less processed flour through some local Mennonites that I love, but I'm betting the almond flour gives a whole new flavor.
